Cooking a large joint of meat is incredibly artful, which is why this recipe is not for the faint-hearted. It’s true that you cannot enjoy a true roast if it’s not over an open amber flame, but if you don’t have that kind of luxury, feel free to follow this tender roast recipe.

  1. To make a flavorful, juicy and succulent roast, take a venison roast (3-4 pounds) and cut deep slits along the length of the meat. Place garlic cloves in each slit.  
  2. Rub your desired spice mixture; traditionally it consists of fragrant rosemary, onion powder, garlic powder and thyme for tartness.  
  3. After marinating the meat, cover it with a breathable cloth and refrigerate for 2 hours.  
  4. When the spices settle into the meat, add carrots, onions and any vegetable of your choice in a roast pan and fill it with half a cup of water.  
  5. Carefully place the meat in the pan, cover it, and pop it in the oven to bake at 325 F for 2.5-3 hours.  

  

Tips & Tricks! 

 

  • A tip to cook venison with the perfect amount of salt is to salt the meat in portions throughout the entire process of cooking. Add salt sparingly while cutting the slits, while marinating and while cooking. This will ensure that the salt doesn’t overpower the entire taste of the dish but still serves its purpose of a light seasoning.  
  •  Before actually roasting the meat, be mindful of bringing it to the room temperature so as to not have a cold centre later.  
  • Venison is also a lean meat. So if you’re wanting something richer in flavour and structure, add some sort of fat overtop the venison after roasting. Suggestions include grilled bacon, the perfect amount of fat and crunch that brings the meal together. 

 

Suggested Additions 

  • Either just serve it as is or strain the sauce from the roast and make a sapid gravy! Add some red onions for a powerful punchy flavour, celery for freshness, quality dark chocolate for tartness, unsalted butter to make it smooth and creamy and half a bottle of Barolo for that iconic sharpness that makes you click your tongue. This gravy recipe is a winner!  
  • For a whole meal, sweet potato mash or grilled sweet potatoes are a staple. They go beautifully with the flavour and texture of the meat and add a subtle sweetness to cancel out the sharp pinch of the venison. 
  •  Cheesy broccoli or cauliflower can also serve as an addition to this meal. 
  •  A green bean or a hash brown casserole (depending on how much you prioritize your health) is a good accompaniment.  
  • So is brown or wild rice for their texture and subtlety of flavour.
